What You’ll Need
- 6 salmon fillets, about 4-6 ounces each
- 1 tablespoon extra virgin olive oil
- 1 tablespoon black pepper, freshly ground
- 1 teaspoon salt
- 2 tablespoons lime juice, freshly squeezed
- 1 medium papaya, cut into cubes
- 1 medium mango, cut into cubes
- 1 medium avocado, cut into cubes
- 1 cup pineapple, cut into cubes
- 1 small red onion, finely chopped
- 1 red bell pepper, finely chopped
- 2 jalapeno peppers, seeds removed and finely chopped
- 1/4 cup cilantro, freshly chopped
- 2 tablespoons orange juice, freshly squeezed
- Zest of 1 lime
Method
Step One
Preheat your grill or broiler on high heat. As it preheats, rub the salmon fillets with the extra virgin olive oil, then season them with the freshly ground black pepper and salt. Set them aside to marinate.
Step Two
Place the prepared salmon fillets on the grill or under the broiler. Cook them for about 4-6 minutes on each side, or until their internal temperature reaches 135 degrees Fahrenheit. Once the salmon is cooked, remove from the heat and drizzle with the fresh lime juice.
