What You’ll Need
- 2 cups of mashed ripe breadfruit
- 1.5 cups of all-purpose flour
- 3 tablespoons of granulated sugar
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 2 large eggs
- 1.5 cups of milk
- 4 tablespoons of unsalted butter, melted
- 1 teaspoon of vanilla extract
- Additional butter for greasing the griddle/pan
- Maple syrup and fresh fruits for topping
Method
Step One
Begin by mashing the ripe breadfruit until you have approximately 2 cups worth. Next, in a large mixing bowl, combine the mashed breadfruit with the all-purpose flour, granulated sugar, baking powder, and salt. Mix these dry ingredients until they are all evenly distributed throughout the mixture.
Step Two
In a separate bowl, crack open the large eggs and beat them lightly. Add the milk, melted unsalted butter, and vanilla extract to the eggs. Mix thoroughly until all the liquid ingredients are well combined.
Step Three
Gradually add the liquid mixture to the dry ingredients while stirring continuously. Mix until a batter is formed. The batter may be slightly lumpy, which is just fine. Just ensure that all the ingredients have been properly mixed in.
Step Four
Light a stove and place a griddle or pan on it. Grease the griddle or pan lightly with some additional butter and allow it to heat up. You can test whether it has heated up enough by dropping a small amount of batter onto it. If it sizzles, the griddle or pan is ready for the pancakes.

Now scoop some batter onto the griddle or pan. Depending on how big you want your pancakes, you can adjust the size of the scoops. Cook each pancake until it’s golden brown on each side, which should take about 2-3 minutes per side.
