What You’ll Need
- 2 large breadfruits
- 2 tablespoons of vegetable oil
- 1 large onion, chopped
- 6 cloves of garlic, minced
- 6 cups of vegetable stock
- 1 cup of coconut milk
- 1 bunch of fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- 1 teaspoon of allspice
- 1 cup of carrots, diced
- 1 cup of celery, diced
- 2 large potatoes, peeled and diced
- 1 handful of fresh parsley, chopped
Method
Step One
Start by peeling the breadfruits, removing the core, and chopping them into bite-sized pieces. Set them aside for later.
Step Two
Heat the vegetable oil in a large pot over medium heat. Once the oil is hot, add the chopped onion and minced garlic. Sauté these ingredients until the onion becomes translucent.
