What You’ll Need
- 1 1/2 cups of all-purpose flour
- 1/3 cup of granulated sugar
- 1/4 teaspoon of salt
- 1/2 cup of unsalted butter, cold and cut into small cubes
- 1 large egg yolk
- 1 to 2 tablespoons of cold water
- 2 cups of fresh or frozen cherries, pitted
- 1/2 cup of granulated sugar
- 2 tablespoons of cornstarch
- 1/4 teaspoon of almond extract
- 2 tablespoons of sliced almonds, lightly toasted
- Whipped cream or vanilla ice cream, for serving (optional)
Method
Step One
First, you need to prepare the tart shell. In a food processor, combine the all-purpose flour, 1/3 cup of granulated sugar, and salt. Add the cold, cubed unsalted butter and process until the mixture resembles coarse crumbs. Add the egg yolk and 1 tablespoon of cold water. Process again until the dough comes together. If needed, add an additional tablespoon of water.
Step Two
Pour the dough onto a lightly floured surface and knead it a few times to bring it together. Press the dough into the bottom and up the sides of a 9-inch tart pan. Refrigerate the tart shell for at least 30 minutes.
Step Three
Now preheat your oven to 375 degrees F (190 degrees C).

While the oven is heating, prepare the cherry filling. In a saucepan over medium heat, combine the cherries and 1/2 cup of granulated sugar. Cook, stirring, until the sugar is dissolved and the cherries release their juices.
