There are certain recipes that transport you to a different place, a different time. The recipe I’m sharing today, the Chicken in Mango and Manzano Chili Sauce, is one such creation. This delightful fusion of Mexican flavors, blended with a comforting ethos inspired by my Irish roots, and my New England upbringing, creates a dish that is rich, hearty and simply unputdownable.
An Ode to my Inspirations
This recipe pays homage to many wonderful influences in my life. My partner Laura, who brought the flavors of Mexico alive in our shared kitchen. My grandparents, whose enriching stories from the gazebos of Ireland, were often flavored with recipes brimming with Irish comfort food. What You’ll Need
- 6 boneless chicken breasts
- 2 tablespoons vegetable oil
- 2 ripe mangoes, peeled, pitted and diced
- 2 manzano chilies, seeded and chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1.5 cups chicken broth
- 1 tablespoon lime juice
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cilantro for garnish
Method
Step One
Heat the vegetable oil in a large pan over medium-high heat. Add the chicken breasts to the pan and cook until they are browned on all sides. Once browned, remove the chicken from the pan and set it aside.
Step Two
In the same pan, add the chopped onion, Manzano chilies, and minced garlic. Sauté these until they become aromatic and the onions develop a translucent appearance. This usually takes about 3-5 minutes.
Step Three
Add the diced mangoes to the pan and cook until the mangoes start to soften. This usually takes about 2-3 minutes.
Step Four
Return the browned chicken breasts to the pan. Add chicken broth, lime juice, sugar, salt, and black pepper. Stir all the ingredients together until they are well combined.
Step Five
Reduce the heat to low and allow the mixture to simmer until the chicken is cooked through and the sauce has thickened. This usually takes about 20-30 minutes.
Step Six
