What You’ll Need
- 2 lbs of boneless, skinless chicken breasts
- 2 tbsp of olive oil
- 2 cloves of garlic, minced
- 1 medium onion, diced
- 1 cup of chicken broth
- 1 cup of crumbled feta cheese
- 1 can (14 oz) of diced tomatoes, drained
- 6 cups of fresh spinach
- 1/2 tsp of salt
- 1/2 tsp of black pepper
- 1 tsp of dried oregano
- 1 tsp of dried basil
Method
Step One
Preheat your oven to 375°F (190°C). Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts to the skillet and season them with salt, pepper, dried oregano, and dried basil. Cook the chicken until it is browned on both sides; it does not need to be cooked through at this stage.
Step Two
Remove the chicken from the skillet and set it aside. In the same skillet, add the diced onion and minced garlic. Saute until the onion becomes translucent and the garlic is fragely fragrant.
Step Three
Add the chicken broth, drained diced tomatoes, and crumbled feta cheese to the skillet. Stir well to combine and bring the mixture to a simmer.
Step Four
Stir in the fresh spinach and continue cooking on a low heat until the spinach wilts down.
Step Five
Transfer the chicken breasts to a large casserole dish and pour the spinach and tomato mixture over the top. Make sure each chicken breast is covered well.
Step Six
Place the casserole in the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked through and the edges of the casserole are bubbling.
Step Seven
