Growing up in Nebraska, the cradle of authentic Midwestern comfort food, I developed an innate love for the wholesome and hearty dishes that defined my childhood. However, amidst the corn casseroles and beef stews, one delightful fruit-based dessert persistently stood out: the Chilled Lime Pie. This refreshing treat embodies that seamless blend of comfort and decadence that is somehow familiar, yet wonderfully fresh. Equipped with a unique understanding of flavours, I’m keen to share this joyous journey of culinary exploration with a dish that has charmed my palate.

Chilled Lime Pie

Family Ties and Pie Highs

As an avid churchgoer and a someone who aspires for a large family, committee potlucks have been a significant part of my upbringing. The vibrant gathering of community members sharing a potluck along with their tales always held a special place in my heartland-rooted life. The Chilled Lime Pie was a staple at these gatherings, a chilled delight that united everyone in a collective “mmmm” of approval. The subtle tartness of fresh lime juice coupled with the sweetness of condensed milk, wrapped up in a humble cracker crust was more than just a pie, it was a symbol of unity and togetherness. But the allure of this pie isn’t limited to its taste alone. Apart from delighting your taste buds, the Chilled Lime Pie gifts some benefits to your health as well, making it a true sensory delight. Flavor Companions and Culinary Cousins

The Chilled Lime Pie shares a delightful kinship with another no-bake masterpiece, the classic lemon bar. Both carry the bright and refreshing note of citrus, enrobed in a crust that provides a perfect counterbalance. Additionally, its refreshing flavor pairs beautifully with a hearty beef stew, a combination I’ve tested and approved multiple times!

Elevating it further, serving this pie with a side of vanilla bean whipped cream (Bon Appétit) can add to the blissful indulgence, draping the dish in a gentle blanket of creamy richness.

To sum up, my love for the Chilled Lime Pie is influenced by my roots, family values, fond childhood memories, and a commitment towards wholesome comfort food. It’s a piece of my heart, garnished with lime slices, hugged by a crust, and served chilled, just the way I love.

What You’ll Need

  • 1 1/4 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 1/3 cup granulated sugar
  • 3 large egg yolks
  • 1 1/2 teaspoons finely grated lime zest
  • 2/3 cup fresh lime juice
  • 1 can (14 ounces) sweetened condensed milk
  • 1 cup heavy cream, chilled
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon pure vanilla extract
  • Fresh lime slices for garnish
ALLERGENS: gluten, dairy, eggs

Method

Step One

To begin the Chilled Lime Pie, start by preheating your oven to 350 degrees Fahrenheit. While the oven is heating, combine the graham cracker crumbs, melted butter, and granulated sugar in a medium-sized bowl. Mix these ingredients together until the crumbs are thoroughly coated in the butter and sugar.

Step Two

Press the graham cracker mixture evenly into the bottom and up the sides of a nine-inch pie dish. Then, bake the crust in the oven for about 10-12 minutes, or until it becomes golden brown. Remove it from the oven and let it cool completely.

Step Three

While your crust cools, you can begin to prepare the filling. In a large bowl, whisk together the egg yolks and lime zest until they become light and fluffy. This should take about 5 minutes. Then, gradually whisk in the condensed milk until it is well combined. Afterwards, slowly add the fresh lime juice and continue to whisk the mixture until it is smooth.

Step Four

Once your crust has cooled completely, pour the lime mixture into it. Place this back in the oven and bake for 15-20 minutes or until the filling is set. Let it cool to room temperature, then refrigerate it for at least 3 hours or until it is completely chilled and firm.

Step Five

In the final step, combine the chilled heavy cream, powdered sugar and vanilla extract in a large bowl. Beat this mixture until soft peaks form. Spread this over the pie and garnish it with fresh lime slices before serving.
Now your Chilled Lime Pie is ready to serve and enjoy!
