I’m thrilled to share with you my latest creation in the kitchen, the Chilled Miracle Fruit Soup. When I came up with exciting blend of fruits, it felt like resonating with Montana’s landscapes, ripe with robust and diverse flavors. This refreshing and vibrant dish exhibits a beautiful fusion of tangy, sweet and cool flavor profiles, making it perfect for a hot summer afternoon.
The Miracle Within
Much like the diverse terrains of my home state, what makes this Chilled Miracle Fruit Soup stand out is its potent blend of fruits, each offering unique health benefits. With strawberries, blueberries and raspberries forming the base, this bowl of goodness is jam-packed with antioxidants and vitamin C. These colourful jewels not only brighten up the dish but also help in strengthening the immune system. The bulk of the soup is formed by pureed pineapple and bananas, which gives the dish a tropical touch along with a nice dose of essential dietary fibers. The addition of the miracle fruit powder also brings a fun element to the dish, with its unique properties of making tart or sour foods taste sweet!
Harmonious Medley of Flavors
To complement these fruit powerhouses, I’ve included fresh orange and lemon juice, adding a lively citrus zing to our Chilled Miracle Fruit Soup. A spoonful of honey is added into the mix, rounding out the bright fruit flavors with a touch of sweetness. The Greek yogurt brings a slightly tangy creaminess, which pairs beautifully with the fruit flavors to create a smooth, velvety texture.
The Perfect Addition to Any Meal
This recipe draws similarity to the classic Spanish Gazpacho, but the fruity twist makes this one uniquely enticing. You could serve this Chilled Miracle Fruit Soup as a delightful starter or a colorful dessert at a barbecue, or simply enjoy it as a refreshing snack on a hot day. Full of vibrant fruit flavors and packed with nutrients, it’s a wonderful way to enjoy the bounty of summer’s harvest. This soup pairs well with grilled dishes, like a bison burger or venison steak, or stands brilliantly on its own as a light lunch. Tantalizing with every spoonful, this creative concoction definitely deserves a place in your culinary repertoire.
As always, don’t forget to garnish with fresh mint leaves to add a refreshing kick and a splash of green vibrancy. And remember, even if it sounds exotic, the beauty of this dish lies in its simplicity, making it a breeze to whip up in your own kitchen. So go ahead, give this Chilled Miracle Fruit Soup a try and let its tapestry of flavors whisk you off to a summer paradise. Enjoy!
What You’ll Need
- 2 cups of fresh strawberries
- 2 cups of fresh blueberries
- 1 cup of fresh raspberries
- 1 whole fresh pineapple, diced
- 2 ripe bananas
- 4 cups of orange juice
- 2 tablespoons of freshly squeezed lemon juice
- 2 tablespoons of honey
- 1 cup of Greek yogurt
- 4 cups of ice cubes
- 6 sprigs of fresh mint for garnish
- 1 tablespoon of miracle fruit powder
Method
Step One
Wash your strawberries, blueberries, and raspberries thoroughly. Drain and put them into a large bowl.
Step Two
Peel and dice your whole pineapple and add it to the bowl of berries. Peel your bananas and slice them into the bowl as well.
Step Three
Next, add four cups of orange juice into the bowl. Make sure all the fruit is coated.
Step Four
Drizzle the freshly squeezed lemon juice over the fruit to provide some acidity to balance the sweetness of the fruits.
Step Five
Add the honey to the bowl and stir everything together until the honey is fully dissolved.
Step Six
Stir in the Greek yogurt until it’s well combined with the fruit and juice. This will give your soup a creamy consistency.
Step Seven
Add your ice cubes to a blender, then pour the fruit and juice mixture over them. Blend until the mix has a smooth, soup-like consistency.
Step Eight
Sprinkle the miracle fruit powder over the soup and stir until it’s completely mixed in.
Step Nine
Chill the soup in the fridge for at least two hours before serving.
Step Ten
When you’re ready to serve your soup, pour it into bowls and garnish each one with a sprig of fresh mint.
