What You’ll Need

  • 1 cup Blackcurrants
  • 12 ounces Semi-sweet Chocolate
  • 1/2 cup Whipping Cream
  • 1/2 cup Unsalted Butter
  • 3 tablespoons Sugar
  • 1/2 cup Unsweetened Cocoa Powder

Method

Step One

Pour your blackcurrants into a saucepan over medium heat. Stir in the sugar and continue cooking the mixture until the blackcurrants are bursting and the sugar is fully dissolved into a syrup. Once done, take it off the heat and set aside.

Step Two

In a separate saucepan, combine the whipping cream and unsalted butter. Stir over medium heat until the butter is fully melted and the cream begins to simmer.

Step Three

Turn off the heat and add in your semi-sweet chocolate to the cream and butter mixture. Stir until the chocolate is completely melted and your mixture is smooth.

Step Four

Pour the blackcurrant syrup into the chocolate mixture. Stir until everything is completely combined and smooth.

Step Five

Place the mixture into a flat dish, cover and refrigerate for at least two hours or until the mixture is firm enough to shape.

Step Six

Once your mixture is firm, use a small ice cream scoop or a spoon to form small ball shapes. Place these on a tray lined with parchment paper.

Step Seven

Roll each truffle into the unsweetened cocoa powder until fully coated. Once done, return the truffles to the refrigerator until you are ready to serve.
