What You’ll Need

  • 1 cup fresh tarragon leaves
  • 2 cups white wine vinegar
  • 2 tablespoons granulated sugar
  • 1 cup mixed berries (raspberries, blackberries, strawberries)
  • 2 orange, zested and juiced
  • 2 lemons, zested and juiced
  • 6 individual serving glasses

Method

Step One

To begin, gather all of your required ingredients. Prepare the fresh herbs by washing the tarragon leaves with cold water and patting them dry. Zest and juice the oranges and lemons.

Step Two

In a medium-sized saucepan, combine the zests, juice, and white wine vinegar. Set this on medium-high heat and allow it to reach a gentle boil.

Step Three

Add the granulated sugar into the saucepan, stirring constantly until it is fully dissolved.

Step Four

Once the sugar is dissolved, add in the fresh tarragon leaves and mixed berries. Stir everything together on gentle heat for a couple of minutes, until the berries begin to fall apart.

Step Five

Remove the saucepan from heat and set aside to cool. Once the mixture is cool, strain out the solids. Make sure to press onto the solids to extract as much liquid as possible. Discard the solids.

Step Six

Pour the strained liquid back into a clean pot and reheat it on medium heat. Allow it to reach a simmer, then remove from heat.

Step Seven

While the mixture is still hot, carefully pour it into the serving glasses. Seal them while hot, and allow to cool before refrigerating.

Step Eight

Allow the vinegar to infuse for at least 2 weeks before using. This will allow all the flavors to fully meld together and infuse into the vinegar.

Step Nine

When you’re ready to use, just shake well before pouring. Store in the refrigerator when not in use, and use within 6 months for best flavor. Enjoy your Classic Tarragon Vinegar along with salads, marinades, and dipping sauces to give a delightful burst of flavor!
