What You’ll Need

  • 4 large egg whites
  • 1 cup of granulated sugar
  • 1/4 teaspoon of salt
  • 1 teaspoon of pure vanilla extract
  • 1/2 teaspoon of pure almond extract
  • 3 cups of unsweetened shredded coconut
  • 1/4 cup of all-purpose flour
  • 1 cup of chopped dried fruit (like cherries, apricots, or dates)
  • 6 ounces of dark chocolate, melted (optional)

Method

Step One

Start by preheating your oven to 350 degrees F (175 degrees C) and then line two baking sheets with parchment paper for later use.

Then, set your heat-proof bowl over a saucepan with simmering water to create a double boiler. You’ll want to stir consistently until the sugar is dissolved and the mixture looks glossy. This typically takes around 4-5 minutes.

Step Four

Once done, remove your bowl from heat and then mix in 3 cups of unsweetened shredded coconut, 1/4 cup of all-purpose flour and 1 cup of your chosen chopped dried fruit. Stir well until everything is well-coated with the egg white mixture.

Step Five

Distribute heaping tablespoons of this mixture onto your lined baking sheets, leaving about an inch between each macaroon.

Step Six

Bake for about 18-20 minutes or until the edges start turning golden brown. Once they’re done, let them cool on the baking sheets for about 5 minutes.
