What You’ll Need

  • 1 pound fresh cranberries
  • 2 large apples, cored and chopped
  • 1 cup walnut halves, toasted
  • 1 cup granulated sugar
  • 1/2 cup dried cranberries
  • 1/2 cup chopped celery
  • 1/4 cup fresh squeezed orange juice
  • 1 teaspoon orange zest
  • Salt to taste

Method

Step One

Begin by washing the fresh cranberries thoroughly under running water, then drain and pat dry with a kitchen towel.

Step Two

For the apples, core and chop them into small pieces. Avoid peeling them as the skin carries a lot of the nutrients and it also adds a nice texture to the salad.

Step Three

Take a dry skillet and toast the walnut halves over medium heat for about 3-5 minutes, stirring occasionally until they’re lightly toasted and fragrant. Let them cool.

Step Four

In a large bowl, combine the fresh cranberries and sugar, tossing until the cranberries are well-coated with the sugar. Set aside for about 10 minutes.

Step Five

Add the chopped apples, toasted walnuts, dried cranberries, and chopped celery to the bowl with the sugared cranberries. Toss all the ingredients together to mix well.

Step Six

In a small bowl, whisk together the fresh squeezed orange juice, orange zest, and a pinch of salt. Pour this dressing over the salad mixture and toss to distribute it evenly.
