What You’ll Need

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 2/3 cup whole milk
  • 1/2 cup dried currants
  • 1 tablespoon grated lemon zest
  • 1/2 cup confectioners’ sugar
  • 2 tablespoons fresh lemon juice

Method

Step One

Preheat your oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.

Step Two

In a large bowl, combine 2 cups of all-purpose flour, 1/3 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Stir until all ingredients are thoroughly combined.

Step Three

Cut in 1/2 cup of chilled and cubed unsalted butter. Use your fingers to mix the butter with the flour mixture until it resembles coarse crumbs.

Step Four

While the scones are baking, prepare the lemon glaze. Combine the 1/2 cup of confectioners’ sugar and 2 tablespoons of fresh lemon juice in a small bowl. Stir until smooth.

Step Ten

After removing the scones from the oven, allow them to cool for a few minutes. Drizzle each scone with the lemon glaze while they are still warm.
