What You’ll Need

  • 2 pounds of damsons, pricked
  • 2 cups of white sugar
  • 1 liter of gin
  • 1 sterilized jar (approximately half a gallon size)

Method

Step One

Prepare your two pounds of damsons by pricking them. This will allow the gin to filter through the fruit properly.

Step Two

Take the sterilized jar and add the pricked damsons into it. Make sure to distribute them evenly.

Step Three

Now add in the two cups of white sugar. Then slowly pour in the gin until the damsons are completely submerged.

Step Four

Secure the lid on your jar and make sure it is fastened tightly to prevent any leakage or air getting in. Give the jar a good shake to help dissolve the sugar.

Step Five

Store the jar in a cool, dark place and let it steep for a minimum of three months. You should shake it occasionally to ensure that the sugar is dissolving properly and the flavors are mixing well.

Step Six

After three months, strain the liqueur into another sterilized bottle or jar through a muslin cloth to remove the damson fruits. Your damson gin is now ready to be enjoyed!
