What You’ll Need

  • 2 cups of self-raising flour
  • 1 cup of granulated sugar
  • 1/2 cup of coconut oil, melted
  • 2 large eggs
  • 1/2 cup of coconut milk
  • 1 teaspoon of vanilla extract
  • 1 cup of dragonfruit, peeled and diced
  • 1/2 cup of shredded coconut
  • Extra shredded coconut for topping

Method

Step One

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and line a muffin tin with paper liners.
