The Dragonfruit and Mango Sorbet is one such detour, an exotic fruit escape that satiates the palate in the most delightful way. What You’ll Need

  • 2 cups of dragonfruit, pureed
  • 1 cup of ripe mango, pureed
  • 1 cup of white sugar
  • 1 tablespoon of lemon juice
  • 1 cup of water
  • 2 tablespoons of light corn syrup

Method

Step One

First, start by pureeing the dragonfruit and ripe mango in a blender or food processor until smooth. Ensure that there are no chunks left behind. Set this aside for later.

Step Two

In a large saucepan over medium heat, combine the white sugar and water. Stir this until the sugar has fully dissolved. This will create a simple syrup.

Step Three

Once the sugar has dissolved, add the light corn syrup to the saucepan. Continue to stir the mixture over medium heat until the syrup is fully incorporated and the mixture has a smooth consistency.

Step Four

Remove the saucepan from the heat and allow it to cool for a bit. Once cooled, add the pureed dragonfruit and mango to the saucepan. Stir everything together until it’s well combined.

Step Five

Add the lemon juice to the mixture and give it a good stir. The lemon juice will help to preserve the color of the fruit and add a tangy note to the sorbet.

Step Six

Once everything is well mixed, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. If you do not have an ice cream maker, you can also pour the mixture into a shallow dish and freeze it, stirring every half hour, until it reaches the desired consistency.
