What You’ll Need

  • 1 ripe durian fruit
  • 4 cups milk
  • 2 1/4 cups all-purpose flour
  • 6 eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 2 cups heavy cream
  • 1/4 cup powdered sugar, for dusting
  • 1 tablespoon butter, for greasing the pan

Method

Step One


First thing’s first – separate the durian flesh from the seeds and skin. Using a spoon or your hands, scoop the flesh out, remove and discard the seeds. Keep the flesh aside for later use.

Step Two


Whisk together the flour, eggs, half of your milk (2 cups), melted butter, granulated sugar, vanilla extract and sea salt in a large bowl. Make sure that all the ingredients are well combined before proceeding to the next step.

Step Three


Heat a non-stick pan and grease it lightly with a tablespoon of butter. Pour a small quantity of the batter into the pan and tilt it until the base of the pan is completely covered.

Step Four


Cook the crepe on medium flame until the edges begin to turn golden brown. Flip the crepe and cook on the other side for 1 to 2 minutes. Continue this process until all your batter is used up.

Step Five


Now, puree the reserved durian flesh using a blender until smooth. Gradually blend in the remaining 2 cups of milk until you achieve a thick and creamy consistency. Set this mixture aside.

Step Six


In a separate bowl, whisk the heavy cream until it forms stiff peaks. Gradually fold in the durian puree and continue folding until it is fully incorporated.

Step Seven


Assemble the cake by placing a crepe on your cake stand or plate. Spread a layer of the durian cream mixture evenly over the crepe. Place another crepe on top and repeat the process until all the crepes and cream are used up.

Step Eight


Make sure to end with a layer of the durian cream on top. Allow the cake to chill in the fridge for a few hours, or overnight, before serving.
