What You’ll Need

  • 6 large eggplants
  • 6 cloves of garlic
  • 2 cups of plain yogurt
  • 1/4 cup of olive oil
  • 2 teaspoons of salt
  • 1 teaspoon of black pepper
  • 2 tablespoons of lemon juice
  • 1 bunch of fresh parsley

Method

Step One

Begin by preheating your oven to 450 degrees Fahrenheit (232 degrees Celsius). While the oven is preheating, line a baking tray with foil. Take your eggplants and pierce them all over with a fork. Place the eggplants on the tray.
