What You’ll Need

  • 12 Feijoas
  • 3 Pears
  • 2 tablespoons of Lemon Juice
  • 1 tablespoon of Honey
  • 1/2 cup of Greek Yogurt
  • 1/4 cup of Almond Slivers
  • 1 tablespoon of Chopped Fresh Mint
  • 1/2 teaspoon of Cinnamon

Method

Step One

Peel your feijoas and pears. Split them in half and remove seeds. Then chop them into moderately sized pieces, ensuring they’re small enough to eat but not so small they lose all their juices.

Step Two

Place the chopped feijoas and pears into a large bowl.

Step Three

Into the bowl, add 2 tablespoons of fresh lemon juice. This will prevent the fruit from browning and also add a fantastic tangy flavour.

Step Four

Drizzle 1 tablespoon of honey over the fruit. This will add a complimentary natural sweetness to the salad.

Step Five

Spoon half a cup of Greek yogurt onto the fruit. Don’t mix just yet, as it’s best to do that just before serving.

Step Six

Sprinkle a 1/4 cup of almond slivers over the Greek yogurt. If you’d like these to be toasted for extra flavour and crispiness, you can do this in a fried pan for about 3-5 minutes before adding them to the salad.

Step Seven

Add a tablespoon of freshly chopped mint to the bowl for a hint of refreshing color and flavor.

Step Eight

Finish with sprinkling half a teaspoon of cinnamon over the top of the salad. The warmth and sweetness of the cinnamon works perfectly in this fruity salad!

Step Nine

Just before serving, carefully mix all the ingredients together ensuring the Greek yogurt, honey, and spices coat the pieces of feijoa and pear evenly. This salad is best served immediately, ensuring the ultimate crispness of the fruit and almonds.
