What You’ll Need

  • 2 cups Fresh Feijoas
  • 1 cup Sugar
  • 1/4 cup Lemon Juice
  • 2 cups Heavy Cream
  • 1 cup Whole Milk
  • 1 teaspoon Pure Vanilla Extract
  • 6 Egg Yolks

Method

Step One

Begin by peeling the fresh feijoas and cutting them in halves. Remove the seeds and place the fruit in a medium-sized saucepan.

Step Two

Add the sugar and lemon juice to the pan with the feijoas. Stir the ingredients together until the sugar has dissolved, then place the pan over a medium heat and bring the mixture to a simmer.

Step Three

Cook the feijoa mixture for about 15 minutes, stirring regularly until the fruit is soft. Remove the pan from the heat and mash the mixture with a potato masher or hand blender to form a puree.

Step Four

In another saucepan, combine the heavy cream and whole milk. Place it over medium heat until it just begins to steam, do not let it boil. Then remove it from heat.

Combine the custard base and the feijoa puree, stirring until well blended. Allow the mixture to cool, then place it in the refrigerator to chill for at least 2 hours.

Step Eight

After the mixture has sufficiently chilled, churn it in an ice cream maker according to the manufacturer’s instructions. Once churned, transfer it to an airtight container and freeze until it reaches your desired consistency.

Step Nine
