One dish that I hold near and dear to my heart is the Thai-inspired Fish Vermicelli Noodles. What You’ll Need

  • 1.5 pounds of white fish fillets
  • 12 ounces of rice vermicelli noodles
  • 2 tablespoons of vegetable oil
  • 3 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 2 red chili peppers, finely chopped
  • 1 large onion, thinly sliced
  • 1 cup of cherry tomatoes, halved
  • 2 tablespoons of fish sauce
  • 1 tablespoon of soy sauce
  • 2 cups of coconut milk
  • 1/2 cup of fresh lime juice
  • 1 tablespoon of sugar
  • 1/2 cup of fresh cilantro, chopped
  • 1/2 cup of fresh basil, chopped
  • 1/2 cup of fresh mint, chopped
  • 2 green onions, thinly sliced
  • Salt and pepper to taste

Method

Step One

Start by bringing a large pot of water to boil. Once boiling, add the rice vermicelli noodles and cook them according to the instructions on the package. When they are cooked, drain them and set them aside.

Step Two

While the noodles are cooking, heat the vegetable oil in a large skillet over medium heat. Add the minced garlic, grated ginger, and finely chopped red chili peppers. Saute these until they are fragrant, which should take about 2 minutes.

Step Three

Next, add the thinly sliced onion to the skillet and continue to cook until the onion has softened and become translucent. This should take about 5 minutes.

Step Four

Now, add the white fish fillets to the skillet. Season them with salt and pepper. Cook each side for about 3 to 4 minutes until they become opaque and can be easily flaked with a fork.

Step Five

At this point, add the halved cherry tomatoes, fish sauce, soy sauce, coconut milk, fresh lime juice, and sugar to the skillet. Stir everything together and let it simmer for around 10 minutes.

Step Six

Once everything has simmered, add the cooked vermicelli noodles to the skillet and toss them in the sauce until they are well coated. Allow everything to cook for another 2 minutes.

Step Seven

Finally, remove the skillet from the heat. Add the fresh cilantro, basil, and mint. Stir everything together until the herbs are well distributed. Top the dish with the thinly sliced green onions before serving.
