What You’ll Need

  • 2 lbs white fish fillets (like cod or tilapia)
  • 1 cup passion fruit juice
  • 2 tablespoons freshly grated ginger
  • 6 cloves garlic, finely chopped
  • 2 limes, juiced
  • 1 tablespoon extra-virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish
  • 6 servings of cooked white rice for serving

Method

Step One

Start by prepping your ingredients: grate your ginger, finely chop your garlic, juice your limes and chop your parsley for garnishing.

Step Two

Clean the fish fillets, then pat them dry. Season the fillets well with salt and pepper according to your preference. Lightly brush the fish fillets with olive oil on both sides.

Step Three

In a bowl, combine the passion fruit juice, lime juice, ginger and chopped garlic. Mix well to combine.

Step Four

Place the fillets in a shallow dish and pour the passion fruit juice mixture over it. Cover the dish and allow the fish to marinate for at least 30 minutes in the refrigerator.

Step Five

Once the fillets have marinated, preheat your oven to 400 degrees F.

Step Six

Bake the fish in the marinade for about 20-25 minutes, or until the fish flakes easily with a fork.

Step Seven

Serve each fillet over a serving of white rice, ensuring to spoon some of the cooking juice over top.
