What You’ll Need

  • 6 fresh peaches, peeled and diced
  • 1 cup white sugar
  • 1 red onion, finely chopped
  • 1/2 cup golden raisins
  • 1/2 cup distilled white vinegar
  • 1 red bell pepper, seeded and finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely grated
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • A pinch of salt

Method

Step One


Begin by peeling and dicing the fresh peaches. This process can be made easier by first slightly boiling the peaches for a few seconds, a procedure known as blanching, and then using a sharp knife to remove the skin.

Step Two


In a large saucepan, mix together the diced peaches, white sugar, finely chopped red onion, golden raisins and distilled white vinegar. Place the pan on medium heat and stir the mixture until it starts boiling.

Step Three


Once the mixture is boiling, add the finely chopped red bell pepper, minced garlic cloves, grated fresh ginger, red pepper flakes, cinnamon, ground nutmeg, ground cloves, and a pinch of salt.

Step Four


Reduce the heat to low and let the mixture simmer. Stir occasionally, and allow the ingredients to cook for about an hour, or until the chutney has thickened to your liking. Be sure to keep an eye out to ensure the chutney does not burn.

Step Five


Turn off the heat and allow the chutney to cool down before transferring it to clean jars. Store the chutney in the refrigerator, where it can keep for several weeks. Note that the taste will further develop over time.
