Not Your Average Potatoes

What sets our Greek Fried Potatoes apart from your standard American fries or mashed potatoes isn’t just the exotic appeal of Mediterranean cuisine. It lies in the use of simple, yet flavor-packed, ingredients. From a single cloves of garlic to a touch of citrus zest, fried potatoes becomes a feast for the senses. Inspiration Behind The Dish

As often happens in my kitchen, the inspiration for this came from an online culinary journey. I have always admired the works of well-known Greek chef, Diane Kochilas. From her I’ve learned the immense possibilities of earthy herbs like oregano and its ability to give a dish like Fried Potatoes a distinctive Greek flavor.

What You’ll Need

  • 6 large Potatoes
  • 2 cloves Garlic
  • 1 tablespoon Oregano
  • Salt to taste
  • Black pepper to taste
  • 1 Lemon (juice and zest)
  • 1/2 cup Olive oil
  • 1 tablespoon finely chopped fresh Parsley
ALLERGENS: Garlic

Method

Step One

First, wash and peel the potatoes. Cut them lengthwise into quarters and place them in a bowl.

Step Two

Mince the garlic cloves and add them to the potatoes. Next, sprinkle over the oregano, salt and black pepper. Make sure to evenly coat all of the potato pieces.

Step Three

In a separate bowl, combine the juice and zest of one lemon with the olive oil. Pour this mixture over the potatoes. Toss everything together to make sure the potatoes are well seasoned.

Step Four

Heat a large frying pan over medium heat. Once it’s hot, add the potatoes to the pan in a single layer. Cook them for about 10-15 minutes, or until they’re golden brown and crispy. You’ll need to turn the potatoes occasionally to ensure they cook evenly.

Step Five

Once the potatoes are cooked to your liking, remove them from the heat. Sprinkle over the fresh parsley. Mix everything one last time before serving your delicious fried potatoes.
