What You’ll Need

  • 3 cups of cooked jasmine rice
  • 1.5 cups of vegan shrimp
  • 2 cups of sliced Chinese cabbage
  • 1 large carrot, finely chopped
  • 1 red bell pepper, finely chopped
  • 4 cloves of garlic, minced
  • 1/2 cup of green onions, chopped
  • 1/4 cup of soy sauce
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of brown sugar
  • 1 tablespoon of fresh lime juice
  • 1 teaspoon of red chili flakes (optional)
  • Salt and pepper to taste

Method

Step One

Start by heating one tablespoon of vegetable oil in a large skillet or wok. Once heated, add the garlic and sauté it until it becomes fragrant. This should take about one minute.

Step Two

Add the finely chopped carrot and cook it until it begins to soften. This should take about two to three minutes. Move the vegetables to one side of the skillet and add the remaining tablespoon of vegetable oil to the empty side. Place the vegan shrimp in the skillet and cook them until they become slightly browned.

Step Four

In the skillet, combine the cooked jasmine rice with the vegetables and vegan shrimp. Stir the components together to ensure they are mixed well.

Step Five

Add the soy sauce, brown sugar, and fresh lime juice to the skillet along with the chili flakes if you choose to include them. Stir the components together well and continue cooking the mixture for another two minutes. This will allow the flavors to blend together.

Step Six

Remove the skillet from the heat and add the chopped green onions. Season the fried rice with salt and pepper according to your preference. Serve the fried rice while it is still hot and enjoy!
