What You’ll Need

  • 2 cups of water
  • 1.5 cups of sugar
  • 1 cup of Gac fruit puree
  • 1 cup of Passion fruit puree
  • 1 Tbsp of lemon juice
  • 1 Tbsp of Vodka (optional)

Method

Step One

First, combine 2 cups of water and 1.5 cups of sugar in a medium sized pot. Stir the mixture over medium heat until the sugar has completely dissolved to create a simple syrup. Allow this to cool completely.

Step Two

Next, take 1 cup of Gac fruit puree and 1 cup of Passion fruit puree and blend them together in a blender. Once it’s well mixed, transfer the puree into a large bowl.

Step Three

Stir the cooled simple syrup into the fruit puree until fully integrated. Add 1 tbsp of lemon juice and stir well.

Step Four

For an optional step, add 1 tbsp of Vodka. This will keep the sorbet from freezing too firmly, keeping it smooth and scoopable. Do remember that this makes it unsuitable for individuals under the legal drinking age or those who abstain from alcohol.
