What You’ll Need

  • 2 medium sized Galia Melons
  • 8 ounces of Feta Cheese
  • 1/4 cup of Olive Oil
  • Juice of 2 large Lemons
  • 1/4 cup of Mint Leaves, finely chopped
  • 1/2 teaspoon of Black Pepper
  • 1/2 teaspoon of Salt

Method

Step One

Start by preparing the Galia melons. Cut them in half and remove the seeds. Then, scoop or cut the melon flesh into bite-sized pieces or balls.

Step Two

Take your Feta cheese and crumble it into small pieces. You can also cut into cubes if you prefer.

Step Three

Next, in a small bowl, combine the olive oil and lemon juice. This will act as your dressing for the salad.

Step Four

Add the finely chopped mint leaves to the lemon and oil mixture. Stir well to combine.

Step Five
