What You’ll Need

  • 2 Galia melons
  • 1/4 pound of Prosciutto, thinly sliced
  • 6 cups of arugula
  • 1/2 cup of extra virgin olive oil
  • 2 tablespoons of white balsamic vinegar
  • 1 teaspoon of dijon mustard
  • 1/2 teaspoon of sea salt
  • 1/2 teaspoon of freshly ground black pepper

Method

First, cut the Galia melons in half. Scoop out the seeds, then slice the melon into thin wedges. Once this is done, peel away the skin from each piece.
