What You’ll Need

  • 1 large galia melon
  • 2 cups of heavy cream
  • 1 cup of granulated sugar
  • 1 whole vanilla bean
  • 4 large egg yolks
  • 1 teaspoon of lemon juice

Method

Step One

Begin by cutting the galia melon in half. Use a spoon to scoop out the seeds and then peel the skin. Cut the melon into smaller pieces and set it aside.

Step Two

Next, set a saucepan over medium heat and add in the heavy cream, sugar, and the vanilla bean. Stir this mixture continually until the sugar is thoroughly dissolved.

Step Three

Then, in a separate bowl, whisk the egg yolks until they become a light yellow color. Slowly add a small amount of the warmed cream mixture to the egg yolks, making sure to stir as you go. This process is called tempering and it helps to slowly bring up the temperature of the eggs without cooking them.

Step Four

Once the eggs have been tempered, pour the overall mixture back into the saucepan. Stir it over low heat until it thickens enough to coat the back of a spoon. This should take around 10 to 15 minutes.

Step Five

Remove the saucepan from heat. Take out the vanilla bean and scrape the seeds into the mixture. Add the cut-up galia melon and the teaspoon of lemon juice into the saucepan. Use a hand blender to puree the mixture until it becomes very smooth.

Step Six

Transfer the mixture into a separate container and let it cool down. Once it’s at room temperature, cover it and place in the fridge to chill for at least 4 hours,preferably overnight.

Step Seven

Once the mixture is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions. Once churned, place the ice cream in an airtight container and freeze it for at least 2 hours or until firm.

Step Eight

After the ice cream is fully set, scoop it into bowls or cones, serve and enjoy your homemade Galia Melon Ice Cream!
