What You’ll Need

  • 1 large ripe Galia melon
  • 1 cup of granulated sugar
  • 1 cup of water
  • Juice of 1 large lemon
  • 2 tablespoons of vodka (optional)

Method

Step One

Firstly, cut the Galia melon into half, scoop out the seeds and then cut the melon into slices. Remove the peel from every slice and dice the flesh into bite-sized pieces.

Step Two

In a saucepan over medium heat, combine the sugar and water. Stir until the sugar completely dissolves in the water. Remove this sugar syrup from heat and allow it to cool for at least 15 minutes.

Step Three

Place the diced Galia melon pieces in a blender or food processor. Pour the cooled sugar syrup over the melon, add the fresh lemon juice, and the vodka if you’re using it. It helps to keep the sorbet softer. If you don’t want to use vodka, you can skip it.

Step Four

Blend all the ingredients until smooth. Pour the puree through a fine-mesh sieve into a large bowl, pressing down with a spatula to extract as much juice as possible.

Step Five

Cover the bowl and refrigerate the melon mixture until it is thoroughly chilled, for about 2-3 hours.

Step Six

Once the mixture is chilled, transfer it into an ice cream maker and churn it according to the manufacturer’s instructions.

After churning, transfer the sorbet into an airtight container and freeze it until it is firm enough to scoop, for at least 3 hours, or overnight.

Step Eight
