What You’ll Need
- 12 large squash blossoms
- 1 cup of creamy goat cheese
- 1 fresh, ripe peach
- 1/2 cup of blueberries
- 1/2 teaspoon of sea salt
- 1/4 teaspoon of fresh ground pepper
- 1 tablespoon of fresh basil leaves, finely chopped
- 1/2 cup of all-purpose flour
- 3/4 cup of seltzer water
- Vegetable oil, for frying
- Fresh mint leaves, for garnish
Method
Step One
Start by gently washing the squash blossoms and laying them on a towel to air dry. Remove the stamens from inside the blossoms carefully to avoid tearing the petals.
Step Two
Mix the creamy goat cheese, finely chopped fresh peach, blueberries, sea salt, ground pepper and finely chopped basil leaves in a bowl until well combined.
Step Three
Grab a small spoon or a piping bag and carefully fill each blossom with the goat cheese mixture. Twist the petals at the end to make sure the filling is secure inside.
Step Four
In a separate bowl, combine all-purpose flour and seltzer water to create a batter. Gently hold the filled blossoms by the stem, then dip into the batter ensuring each one is covered completely.
Step Five
Pour the vegetable oil into a deep frying pan, and heat it over medium-high fire. Once the oil is hot, place the battered blossoms into the pan. Let them cook until they are golden brown, usually 2-3 minutes per side.
Step Six
Once finished frying, let the blossoms cool on a paper towel to drain the excess oil.
