I would like to share with you one of my favorite dessert recipes I have grown to love over the years, our stunning Gooseberry and Almond Frangipane Tart Recipe. Developed with the zest for fresh Californian produce and a touch of my Gujarati heritage’s love for fruits and nuts, this tart is a delightful example of an Indian-American fusion dish that is close to my heart.

The Sweet Harmony of West and East

The vibrant traditional West Coast love for fresh and organic ingredients meets the warmth of Gujarat, my ancestral land, known for its unique culinary delights brimming with flavors, in this one tantalizing tart. The gooseberries add a tart twist that’s beautifully balanced by the sweet Frangipane almond filling, creating a luscious explosion of tastes that captures the best of my dual heritage. I fondly remember times I’ve served this to my husband Faisal and our two sons, and their appreciative smiles reaffirm my love for this recipe time and again.

Gooseberry and Almond Frangipane Tart

Drawing similarities from other classic desserts such as the traditional English Bakewell tart and the French Tarte aux amandes, our Gooseberry and Almond Frangipane Tart Recipe offers a whole new world of flavors that would leave you craving for more. Its buttery and flaky crust gives way for a rich, almond filling and ends with a tangy gooseberry burst. Just wonderful served alone or perhaps paired with a warm cup of masala chai, this recipe is one that you would thoroughly enjoy baking and serving.

Nutritional Bonanza

Apart from the joy of biting into this glorious tart, you won’t feel guilty indulging in it either! Packed with gooseberries- a powerhouse of vitamins, and almonds rich in healthy fats, our tart is not just a treat for the tastebuds but also a wonderful addition to your healthy diet. Gooseberries are known for their immunity-boosting properties, and the almonds provide a great source of protein and fiber. Moreover, the absence of artificial sugars means you can savor this dessert without the added worry of unhealthy calories.

It’s my sincerest hope that this recipe brings as much joy to your family as it has to mine. That it becomes an endearing part of your culinary experiments and sparks your love for fusion cuisine just like it did for me. Happy baking!

What You’ll Need

  • 1 and 1/2 cups of all-purpose flour
  • 1/4 cup of granulated sugar
  • 1/2 teaspoon of salt
  • 9 tablespoons of unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1 tablespoon of cold water
  • 1 cup of gooseberries
  • 1 tablespoon of all-purpose flour
  • 1 cup of almond meal
  • 1/2 cup of granulated sugar
  • 1/2 cup of unsalted butter, room temperature
  • 1 teaspoon of almond extract
  • 2 large eggs
  • 1/4 cup of sliced almonds
  • 1/4 cup of apricot jam
ALLERGENS: Wheat, Egg, Milk, Almond

Method

Step One

Start by making the crust. In a large bowl, whisk together 1 and 1/2 cups of all-purpose flour, 1/4 cup of granulated sugar, and 1/2 teaspoon of salt. Next, add the 9 tablespoons of cold, cubed unsalted butter and use your fingers to mix until a coarse meal forms. In a separate bowl, whisk together the large egg yolk and 1 tablespoon of cold water, then add this to your flour mixture. Stir until a dough begins to form, then transfer this to a work surface and knead a few times to bring it together. Shape the dough into a disc, wrap in cling film, and chill for at least 1 hour.

Step Two

While the crust is chilling, you can prepare the filling. Toss the cup of gooseberries in a bowl with 1 tablespoon of flour. In a different bowl, combine the cup of almond meal, 1/2 a cup of granulated sugar, 1/2 a cup of room temperature unsalted butter, and 1 teaspoon of almond extract. Add the 2 large eggs, one at a time, mixing well after each addition.

Step Three

Once the crust is fully chilled, preheat your oven to 375°F (190°C). Roll out your dough to fit a 9-inch tart pan, then trim any excess. Spread the almond mixture over the crust, then top with the floured gooseberries. Sprinkle over the 1/4 cup of sliced almonds.

Step Four

Bake the tart in the preheated oven for around 35-40 minutes, or until the crust is golden and the filling is set.

Step Five

Remove the tart from the oven and while it’s still warm, brush the top lightly with a 1/4 cup of apricot jam to glaze. Once the tart has cooled, it’s ready to serve and enjoy.
