I would like to share with you one of my favorite dessert recipes I have grown to love over the years, our stunning Gooseberry and Almond Frangipane Tart Recipe. Developed with the zest for fresh Californian produce and a touch of my Gujarati heritage’s love for fruits and nuts, this tart is a delightful example of an Indian-American fusion dish that is close to my heart.

What You’ll Need
- 1 and 1/2 cups of all-purpose flour
- 1/4 cup of granulated sugar
- 1/2 teaspoon of salt
- 9 tablespoons of unsalted butter, cold and cubed
- 1 large egg yolk
- 1 tablespoon of cold water
- 1 cup of gooseberries
- 1 tablespoon of all-purpose flour
- 1 cup of almond meal
- 1/2 cup of granulated sugar
- 1/2 cup of unsalted butter, room temperature
- 1 teaspoon of almond extract
- 2 large eggs
- 1/4 cup of sliced almonds
- 1/4 cup of apricot jam
Method
Step One
Start by making the crust. In a large bowl, whisk together 1 and 1/2 cups of all-purpose flour, 1/4 cup of granulated sugar, and 1/2 teaspoon of salt. Next, add the 9 tablespoons of cold, cubed unsalted butter and use your fingers to mix until a coarse meal forms. In a separate bowl, whisk together the large egg yolk and 1 tablespoon of cold water, then add this to your flour mixture. Stir until a dough begins to form, then transfer this to a work surface and knead a few times to bring it together. Shape the dough into a disc, wrap in cling film, and chill for at least 1 hour.
Step Two
While the crust is chilling, you can prepare the filling. Toss the cup of gooseberries in a bowl with 1 tablespoon of flour. In a different bowl, combine the cup of almond meal, 1/2 a cup of granulated sugar, 1/2 a cup of room temperature unsalted butter, and 1 teaspoon of almond extract. Add the 2 large eggs, one at a time, mixing well after each addition.
Step Three
Once the crust is fully chilled, preheat your oven to 375°F (190°C). Roll out your dough to fit a 9-inch tart pan, then trim any excess. Spread the almond mixture over the crust, then top with the floured gooseberries. Sprinkle over the 1/4 cup of sliced almonds.
Step Four
Bake the tart in the preheated oven for around 35-40 minutes, or until the crust is golden and the filling is set.
Step Five
Remove the tart from the oven and while it’s still warm, brush the top lightly with a 1/4 cup of apricot jam to glaze. Once the tart has cooled, it’s ready to serve and enjoy.
