  • 1/2 cup of white sugar
  • 1/4 cup of apple cider vinegar
  • 1/4 cup of water
  • 1 small red onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 tbsp mustard seeds
  • 1 small jalapeño pepper, minced (optional)
  • 1 tsp of salt
  • 1/2 tsp ground ginger
  • 1/2 teaspoon ground cinnamon

Method

Step One

Start by preparing your ingredients. Rinse and drain 1.5 cups of fresh gooseberries. Finely chop 1 small red onion and 1 red bell pepper. If you’d like a spicy kick, you can also mince 1 small jalapeño pepper.

Step Two

In a medium-sized pot, combine the chopped onions, chopped bell pepper, minced jalapeño pepper(if using), 1/2 cup of white sugar, 1/4 cup of apple cider vinegar, 1/4 cup of water, 1 tbsp of mustard seeds, 1 tsp of salt, 1/2 tsp of ground ginger, and 1/2 tsp of ground cinnamon. Stir everything together until they are mixed well.

Step Three

Place the pot over a medium-high heat and bring the mixture to a simmer. Once it starts simmering, reduce the heat to medium-low and let it cook for about 10 minutes.

Step Four
