What You’ll Need
- 2 cups of fresh Grewia Asiatica (Phalsa fruit)
- 2 cups of heavy cream
- 1 cup of whole milk
- 1/2 cup of granulated sugar
- 1/2 cup of light corn syrup
- 1/4 teaspoon of pure vanilla extract
- Pinch of salt
- 1/4 cup of pure honey
Method
Step One
First, prepare the Grewia Asiatica by washing and patting them dry. Remove any stems or leaves if necessary.
Step Two
Next, combine the Grewia Asiatica with 1/4 cup of sugar in a saucepan over medium heat. Allow the sugar to dissolve and the fruit to break down, stirring regularly. Once the fruit has broken down, remove from heat and allow to cool.
Step Three
While the fruit mixture is cooling, combine the heavy cream, whole milk, the remaining sugar, light corn syrup, vanilla extract and a pinch of salt in a separate saucepan. Cook on medium heat, stirring frequently, until the sugar has fully dissolved.
Step Four
Once the sugar has dissolved, remove from heat. Add in the pure honey and stir until it is fully mixed in with the creamy mixture.
Step Five
Once the fruit mixture has cooled, strain it to remove any seeds or remaining solids. Then, combine the fruit juice with the cream mixture.
Step Six
Now, chill the mixture in the fridge for at least 4 hours. For the best results, keep it in the fridge overnight.
Step Seven
Finally, churn the mixture in your ice cream maker according to the manufacturer’s directions. Once churned, transfer the ice cream to a lidded container and freeze for at least 4 hours or until it has reached your desired hardness. Enjoy!
