What You’ll Need
- 3 packs of halloumi (each pack approximately 8 ounces)
- 2 pounds of green asparagus
- 6 tablespoons of olive oil
- 3 tablespoons of lemon juice
- 6 cloves of garlic, minced
- 3 tablespoons of fresh mint, chopped
- Salt and black pepper to taste
Method
Step One
Begin by preheating your grill or griddle pan on a medium-high heat. In the meantime, trim the ends off your green asparagus and wash them thoroughly. Pat dry with a kitchen towel.
Step Two
Drizzle about half of the olive oil over the asparagus and season with salt and pepper. Ensure the asparagus is evenly coated by tossing it lightly.
Step Three
Next, take your halloumi cheese and cut it into slices. Avoid slicing it too thinly or it may break apart during the grilling process.
Step Four
Grill your asparagus first as they will take longer to cook. Arrange them on your grill or griddle pan and cook for about 8-10 minutes, turning occasionally. You are looking for a slight char and a tender texture.
Step Five
While your asparagus is grilling, prepare your dressing. Combine the remaining olive oil, lemon juice, minced garlic, and chopped fresh mint in a bowl. Whisk until well combined and then season with salt and pepper according to taste.
