What You’ll Need

  • 6 pieces of salmon fillets, about 6 ounces each
  • 1 tablespoon of olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • 2 large limes, juiced
  • 2 large limes, zested
  • 1 cup of fresh cilantro, chopped
  • 1 large mango, pitted and diced
  • 2 large avocados, pitted and diced
  • 1/2 medium red onion, finely chopped
  • 1 jalapeno, seeded and finely chopped
  • 1 clove of garlic, minced
  • 3 tablespoons of fresh lime juice
  • 1 tablespoon of olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Cilantro leaves, for garnish
  • Grilled lime slices, for garnish

Method

Step One

Begin by preheating your grill over medium-high heat. Make sure the grill is clean and well oiled to prevent the salmon from sticking.

Step Two

Next, take the six pieces of salmon fillets and rub them with one tablespoon of olive oil. Season the salmon fillets with sea salt, freshly ground black pepper, chili powder and cumin.

Step Three

Place the seasoned salmon fillets on the grill. Grill each side for about 3-4 minutes or until the salmon is opaque throughout.

Step Four

While the salmon is grilling, prepare the dressing by whisking together the juice and zest of two large limes, one cup of chopped cilantro, and the additional tablespoon of olive oil in a small bowl.

Step Five

In a separate bowl, combine the diced mango and avocados, finely chopped red onion, chopped jalapeno, minced garlic, and the additional 3 tablespoons of lime juice. Mix these together well.

Step Six

Pour the prepared dressing over the mango-avocado salsa and toss gently to combine. Season the salsa with additional sea salt and freshly ground black pepper to taste.

Step Seven

When the salmon is done grilling, remove it from the grill and let it rest for a few minutes.
