What You’ll Need

  • 3 large pomelos
  • 1 1/2 lb chicken breasts
  • 6 wooden skewers, soaked in water
  • 3 tablespoons olive oil
  • 2 teaspoons sea salt
  • 2 teaspoons black pepper
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1/4 cup fresh lemon juice
  • 1/4 cup chopped fresh cilantro

Method

Step One

Start by cutting the pomelos into thin slices. Set aside.

Step Two

Cut the chicken breasts into 1-inch pieces. Thread the chicken pieces onto the soaked wooden skewers.

Step Three

Prepare the marinade: in a large bowl, combine the olive oil, sea salt, black pepper, soy sauce, honey, minced garlic, grated ginger, fresh lemon juice, and chopped cilantro.

Step Four

Add the chicken skewers and the pomelo slices into the bowl with the marinade. Toss everything together to ensure that the chicken and pomelos are well coated in the marinade. Leave to marinate for at least 30 minutes, if not overnight.

Step Five

Preheat a grill or a grill pan over medium-high heat. Once the grill is hot, place the skewered chicken and pomelo slices on the grill. Grill for about 5-7 minutes on each side, or until the chicken is fully cooked and the pomelos are slightly charred.

Step Six

Serve the grilled chicken and pomelo skewers warm, garnished with additional cilantro if desired. Enjoy!
