What You’ll Need

  • 2 pounds of large shrimp, peeled and deveined
  • 1 large pomelo, peeled and segmented
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 4 cloves of garlic, minced
  • 1 tablespoon grated ginger
  • Zest and juice from 1 lemon
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh cilantro
  • 6 skewers

Method

Step One

Start by preparing the marinade. In a large bowl, combine the olive oil, soy sauce, honey, minced garlic, grated ginger, lemon zest and juice, black pepper, red pepper flakes if using, and chopped cilantro. Mix them well until fully combined.

Step Two

Add the peeled and deveined shrimp to the bowl of marinade. Stir lightly until all the shrimp are coated in the marinade. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes to an hour.

Step Three

After the shrimp has been marinated, preheat your grill to medium high heat. While waiting for the grill to heat up, start skewering the marinated shrimp and pomelo segments alternately onto the skewers.

Step Four

Once the grill is heated and your skewers are ready, place them on the grill. Cook the skewers for about 2-3 minutes on each side or until the shrimp are pink and the pomelo segments have nice grill marks. Be sure to turn the skewers occasionally to ensure even cooking.
