Method

Step One

Season the Wreckfish fillets thoroughly on all sides with salt and black pepper. Next, preheat your grill to medium heat. If you’re using wooden skewers, remember to have them soaked in water at least 30 minutes prior to use.

Step Two

In a small bowl, whisk together the olive oil and lemon juice. Brush this mixture onto the seasoned fillets, ensuring all surfaces are coated. Set the prepared fillets aside to marinate for a few minutes.

Step Three
