What You’ll Need

  • 3 medium hala fruits
  • 2 cups of coconut milk
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of curry powder
  • 1 teaspoon of turmeric
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper
  • Salt to taste
  • 2 tablespoon of lime juice
  • 3 cups of water
  • Fresh cilantro leaves for garnish

Method

Step One

Start by preparing the hala fruits. Peel the fruits, remove the pits, then cut into segments. Set aside.

Step Two

Heat the vegetable oil in a large saucepan over medium heat. Add the finely chopped onion to the pan, stirring regularly until translucent and softened.

Step Three

Add the minced garlic and grated ginger to the saucepan. Sauté briefly until aromatic, then add the curry powder, turmeric, cumin, paprika, and cayenne pepper. Cook for another minute, stirring constantly to prevent burning.

Step Four

After 20 minutes, remove the lid from the saucepan and continue to simmer for another 10-15 minutes until the sauce has thickened slightly. Stir in the lime juice and season with salt to taste.
