  • 1-2 teaspoons ground mahleb
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup dried mixed fruit
  • 1/3 cup honey
  • 1/2 cup buttermilk
  • For glaze: 2 tablespoons honey and 2 tablespoons warm water mixed

Method

Step One

Preheat your oven to 425 degrees Fahrenheit. Take a baking sheet and line it with parchment paper.

Step Two

In a large bowl, combine the 2 cups of all-purpose flour, 1/3 cup of sugar, 1-2 teaspoons of ground mahleb, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda and 1/2 teaspoon of salt.

Step Three

Add the 1/2 cup of cold and cubed unsalted butter to the bowl. Rub it into the flour mixture with your fingertips until it forms a texture like coarse meal. Stir in the 1/2 cup of dried mixed fruit.

Step Four

In a separate smaller bowl, whisk together the 1/3 cup of honey and 1/2 cup of buttermilk. Pour this mixture into the large bowl with the flour and fruit. Use a fork to stir everything together until a dough starts to form.

Step Five

Turn the dough out onto a lightly floured surface. Knead it gently a few times to bring it together, then pat it into a rectangle that’s about 1 inch thick. Cut the dough into triangles or your desired scone shape.

Step Six

Place the scones onto the prepared baking sheet. Bake them in the preheated oven for 15-18 minutes, or until they’re golden and cooked through.

Step Seven

While the scones are still hot, brush them with the glaze made from 2 tablespoons of honey mixed with 2 tablespoons of warm water. Allow them to cool slightly, then enjoy your delicious Honey-Mahleb Scones!
