There’s something comforting, delightful even, about sinking your fork into a mound of creamy mashed potatoes. Now, imagine that experience amplified with a punchy hint of horseradish. Intrigued? You should be, because I’m about to introduce you to my favorite dish: Horseradish Mashed Potatoes.

Horseradish Mashed Potatoes

Embodying the heartiness of my Californian upbringing and nodding subtly to the boldness of Indian cuisine, these Horseradish Mashed Potatoes make such a compelling statement on your palate, while perfectly harmonized with dishes you traditionally enjoy. They pair well with bold meat dishes like beef stew or shine as the celebrated protagonist next to something simple like a lightly seasoned grill-roasted chicken.

A Healthful Comfort Meal

What I love that sets this recipe apart from your average mashed potatoes is that it has health benefits too! Potatoes are an excellent source of Vitamin C and are also packed with fiber and potassium. The horseradish, while it gives a wonderful flavor, also brings in its own fair share of vitamins and minerals. According to Healthline, horseradish is rich in antioxidants and may help fight infections.

Fusing Flavors and Cultures in One Bowl

At first glance, my Horseradish Mashed Potatoes may seem very had-Lilke something you’d tuck into by the fireplace on a Californian winter night. Yet, those of you familiar with Gujarati dishes like Khaman or Dhokla will recognize a similar dance of bold flavours in this dish. It’s this blend of my roots and my current world that makes my love for this recipe flourish.

My husband, Faisal, often teases me about my shared love for mashed potatoes and horseradish. He never misses a chance to remind our sons how they’re sharing a melange of cultures with every spoonful. I share this not just for the warmth it fills my heart with but to demonstrate how seemingly contrasting elements can harmoniously coexist and create something beautiful and memorable, much like our family’s multi-cultural journey.

To truly appreciate the full range of flavors this dish presents, I encourage you to try making Horseradish Mashed Potatoes. It is every bit as delightful and delectably rounded as it promises to be.

What You’ll Need

  • 2 pounds Russet potatoes
  • 1 1/2 cups whole milk
  • 4 tablespoons unsalted butter
  • 1/4 cup prepared horseradish
  • 1/2 cup heavy cream
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped chives, for garnish
ALLERGENS: Milk, Butter

Method

Step One

Begin by thoroughly washing the 2 pounds of Russet potatoes. Afterwards peel them and cut into uniform, bite-sized pieces. This will ensure they cook evenly in the pot.

Step Two

Place the chopped potatoes in a large pot and add enough water to cover the potatoes. Bring the water and potatoes to a boil and let them cook for about 15-20 minutes, or until the potatoes are soft when pierced with a fork.

Step Three

While the potatoes are cooking, combined 1 1/2 cups whole milk and 4 tablespoons of unsalted butter in a small saucepan. Warm it over medium heat until butter is melted. Take the pot off the heat once done.

Step Four

Drain the potatoes thoroughly and return them to the pot. Then, pour over the warm milk and butter mixture. Add 1/4 cup prepared horseradish and 1/2 cup heavy cream. Use a potato masher or an electric mixer to mash the potatoes and mix everything together.

Step Five

Add salt and freshly ground black pepper, to taste. Be sure to taste as you season, adding more salt or pepper as needed to taste.

Step Six

Finally, transfer the mashed potatoes to a serving dish. Garnish with chopped chives before serving. Enjoy your Horseradish Mashed Potatoes!
