  • 12 large eggs
  • 2 medium onions, finely chopped
  • 2 red bell peppers, chopped

Method

Step One

Add the minced garlic to the skillet and cook for another 2 minutes until fragrant. Stir in the tomato sauce, smoked paprika, ground cumin, salt, and pepper. Cook for an additional 5 minutes to allow the flavors to meld.

Step Five

Return the cooked chorizo to the skillet and mix well. Remove the skillet from heat.

Step Six

Divide the chorizo and vegetable mixture evenly into six individual oven-safe dishes or ramekins.

Step Seven
