It is not so often that we come across a culinary gem that is simply waiting to be discovered, and my Jackfruit Curry recipe is undoubtedly one of those. Raised in an Italian-American household, I’ve always been captivated by the importance of family, culture, and food. This dish, however, is not a traditional Italian one, rather, it’s an example of how my culinary journey has brilliantly expanded over the years.
A Healthful Culinary Adventure
Unlike the hearty spaghetti and meatballs of my youth, this Jackfruit Curry introduces a lighter, yet equally satisfying dish. The jackfruit – not to be confused with “junk food” – might strike as an unusual ingredient to some, but it is indeed the star of this curry. The benefits of this tropical fruit go beyond its delightful taste; research has shown that jackfruit is rich in vitamins, minerals, and dietary fiber, potentially supporting everything from digestion to immunity.
The Art of Pairing
Jackfruit Curry may seem unique and singular, but it actually aligns well with a variety of other dishes. For instance, this entrée harmonizes beautifully with coconut basmati rice, a pairing that highlights the flavorful coconut milk within the curry. Or perhaps you might serve it aside a cooling cucumber mint raita, a yogurt-based condiment that provides a delightful contrast to the curry’s spice.
Whether you’re a seasoned food adventurer or a humble dwelling home cook, I can promise you this: The harmony of the ingredients will make you fall in love with this Jackfruit Curry, just as I did when I first stirred the pot. From the robust flavor of turmeric and the spicy warmth of red chili to the sweet and creamy finish from coconut milk — every bite of this richly spiced curry is a delightful exploration of Indian cuisine.
As a grandfather, I hope to leave behind not only recipes, but also an appreciation for the world’s vast culinary landscape. And just as hiking opens my eyes to the beauty of the world around me, I hope this jackfruit curry recipe can inspire an adventurous spirit in your own kitchen, adding some magic on your family’s table, one dish at a time.
What You’ll Need
- 2 cups fresh or canned jackfruit, drained and chopped
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 large tomato, chopped
- 1 green chili, slit lengthwise
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 cups coconut milk
- 1 tablespoon freshly chopped cilantro for garnish
Method
Step One
Heat up 2 tablespoons of vegetable oil in a large pan. Then add a finely chopped large onion and sauté until it turns a golden brown color.
Step Two
Add 2 cloves of minced garlic and 1 tablespoon of minced fresh ginger to the pan. Stir everything well and continue to sauté until the raw smell of the garlic and ginger goes away.
Step Three
Next, add a chopped large tomato and a slit green chili to the pan. Cook until the tomatoes start breaking down and become softened.
Step Four
Now it’s time to add the spices. Sprinkle 1 teaspoon of turmeric powder, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, 1 teaspoon of garam masala, and 1/2 teaspoon of red chili powder over the mixture in the pan. Stir well to combine.
Step Five
Add the chopped jackfruit to the pan. Stir well to ensure each piece of jackfruit is coated with the spices and other ingredients. Add salt to taste. Continue to cook for a few minutes until the jackfruit starts to soften and blend with the spices.
Step Six
Pour 2 cups of coconut milk into the pan. Stir well, and then lower the heat. Allow the curry to simmer for about 20 minutes, or until the jackfruit is tender and the flavors have melded together.
Step Seven
Check the taste and adjust the salt or spices if necessary. Turn off the heat, and then garnish the curry with 1 tablespoon of freshly chopped cilantro. Your delicious Jackfruit Curry is ready to be served!
