What You’ll Need

  • 2 cups ripe Jackfruit, deseeded and sliced
  • 1.5 cup whole milk
  • 1.5 cup thick cream
  • 3/4 cup white sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt

Method

Step One

Begin by preparing your jackfruit. Remove the seeds and slice the fruit into small, manageable pieces. Place to one side.

Step Two

In a large mixing bowl, combine your whole milk, thick cream, white sugar, vanilla extract and salt. Use a whisk or electric mixer to combine the ingredients until the sugar has dissolved and the mixture is smooth.

Step Three

Add your sliced jackfruit to the milk and cream mixture. Stir thoroughly to ensure the fruit is evenly distributed and then transfer the mixture to a large saucepan.

Step Four

Heat the mixture over a medium heat, stirring regularly to prevent sticking and ensure the flavours are well mixed. Once the mix has just started to simmer, remove it from the heat and let it cool to room temperature.

Step Five

Once cooled, pour the mixture into an ice cream maker. Follow the manufacturer’s instructions in order to churn the ice cream.

Step Six

Once the ice cream has reached your desired consistency, transfer it to a lidded container and place it in the freezer to firm up. This will usually take between 2-4 hours, depending on your freezer.

Step Seven
