What You’ll Need

  • 1 whole chicken (4-5 lbs)
  • 2 tablespoons olive oil
  • 2 jalapeño peppers, seeded and finely chopped
  • 4 garlic cloves, minced
  • 1 lemon, thinly sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 cup chicken broth
  • 3 medium sweet potatoes, peeled and cubed
  • 1 large red onion, cut into wedges
  • 1 red bell pepper, sliced
ALLERGENS: Chicken, garlic

Method

Step One: Preheat Oven and Prepare Chicken

Preheat your oven to 375°F (190°C). Rinse the whole chicken under cold water and pat it dry with paper towels.

Step Two: Prepare Seasoning Mixture

In a small bowl, combine 2 tablespoons of olive oil, 2 finely chopped jalapeño peppers, 4 minced garlic cloves, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, 1 teaspoon of dried oregano, and salt and pepper to taste. Mix well to form a seasoning paste.

Step Three: Season the Chicken

Rub the seasoning mixture all over the chicken, making sure to get some under the skin for maximum flavor. Place the thinly sliced lemon inside the cavity of the chicken.

Step Four: Arrange Vegetables

In a large roasting pan, arrange the 3 peeled and cubed sweet potatoes, wedges of 1 large red onion, and slices of 1 red bell pepper. Spread them out evenly in the pan.

Step Five: Place Chicken in Roasting Pan

Place the seasoned chicken on top of the vegetables in the roasting pan. Pour 1 cup of chicken broth into the pan around the vegetables.

Step Six: Roast the Chicken

Roast the chicken in the preheated oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 165°F (75°C) when checked with a meat thermometer. Baste the chicken with the pan juices occasionally to keep it moist.

Step Seven: Finish and Serve

Remove the roasting pan from the oven. Let the chicken rest for about 10-15 minutes before carving. While the chicken rests, sprinkle the chopped 1/4 cup of fresh cilantro and drizzle 2 tablespoons of fresh lime juice over the roasted vegetables. Serve the chicken with the roasted vegetables on the side. Enjoy!
