What You’ll Need

  • 8 cups water
  • 2 tablespoons dashi powder
  • 2 tablespoons soy sauce
  • 2 teaspoons mirin
  • 1/2 teaspoon salt
  • 4 cups (about 8 ounces) coarsely chopped komatsuna (Japanese mustard spinach)
  • 6 large eggs, beaten
  • 2 green onions, thinly sliced
ALLERGENS: Soy, Egg

Method

Step One

In a large pot, bring 8 cups of water to a boil over medium-high heat.

Step Two

Once the water is boiling, add 2 tablespoons of dashi powder, 2 tablespoons of soy sauce, 2 teaspoons of mirin, and 1/2 teaspoon of salt. Stir until the dashi powder is completely dissolved.

Step Three

Add 4 cups of coarsely chopped komatsuna to the pot. Cook until the komatsuna is tender but still bright green, about 2-3 minutes.

Step Four

Reduce the heat to medium-low. Slowly pour the 6 beaten eggs into the soup in a steady stream while gently stirring to create ribbons of egg.

Step Five

Allow the soup to simmer for another 1-2 minutes until the eggs are fully cooked.

Step Six

Turn off the heat and stir in the thinly sliced green onions. Serve the soup hot.
