What You’ll Need
- 2 cups of Jostaberries
- 1 cup of granulated sugar
- 2 tablespoons of cornstarch
- 1/4 teaspoon of salt
- 1 tablespoon of lemon juice
- 1 tablespoon of butter, cut into pieces
- 1 package of pre-made pie crust
- 1 egg, beaten
- 1 tablespoon of milk
- Additional sugar for sprinkling
Method
Step One
First, preheat your oven to 400 degrees F (200 degrees C).
Step Two
Next, in a large bowl, combine the Jostaberries, granulated sugar, cornstarch, salt, and lemon juice. Gently stir until the berries are well coated.
Step Three
Then, unroll one of your pre-made pie crusts and fit it into a 9-inch pie pan. Spoon the berry mixture into the crust and dot it with pieces of butter.
Step Four
Roll out the second pie crust and place it over the filling. Crimp the edges to seal the pie, and make several slits in the top to allow steam to escape.
Step Five
In a small bowl, beat together the egg and milk to make an egg wash. Brush this mixture over the top of the pie, then sprinkle with additional sugar.
Step Six
Bake for 45-50 minutes, until the crust is golden and you can see the filling bubbling. You may want to put a baking sheet underneath the pie to catch any drips.
Step Seven
