The original recipe is a nod to the Alps, with the salmon bathed in a lavish white wine and cream sauce, then adorned with grated Gruyère cheese – a Swiss masterpiece!

This recipe reminds me a lot of Cream Braised Chicken popularized by Chef Ludo Lefebvre, a maestro of French cuisine. Both dishes have a luscious cream-based sauce that pairs wonderfully with a perfectly cooked protein. What You’ll Need

  • 6 salmon fillets (6 ounces each)
  • 1 cup white wine
  • 2 cups heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 cup grated Gruyere cheese
  • Zest and juice of one lemon
ALLERGENS: Fish (salmon), Milk (heavy cream, Gruyere cheese)

Method

Step One

Start by preheating your oven to 375 degrees F (190 degrees C). While the oven is heating, grease a baking dish lightly with some olive oil.

Step Two

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and finely chopped onion to the skillet. Saute them until they are soft and fragrant.

Step Three

Next, add the white wine to the skillet. Let it simmer for a few minutes to allow the onion and garlic to absorb the wine.

Step Four

Add the heavy cream to the skillet and continue to simmer. Stir in the fresh dill, fresh parsley, salt, and freshly ground black pepper. Let the mixture simmer until it starts to thicken.

Step Five

Take your salmon fillets and season both sides with salt and freshly ground black pepper. Place the fillets in the prepared baking dish.

Step Six

Pour the cream mixture from the skillet over the top of the salmon, ensuring every piece is covered. Sprinkle the grated Gruyere cheese over the top of the salmon and cream mixture.

Step Seven

Bake in the preheated oven for about 20 minutes. The salmon should be flaky when done.“

Step Eight

While the salmon is baking, take your lemon and zest it, then squeeze out the juice. Once the salmon is fully cooked and out of the oven, sprinkle it with the lemon zest, and then drizzle the lemon juice on top.

Step Nine

Serve your Jura Salmon Fillet hot and enjoy it with a side of your choice. Perhaps a fresh salad or some steamed vegetables.
