What You’ll Need
- 1 cup of sugar
- 6 cups of water
- 1/2 cup of freshly squeezed kaffir lime juice
- 1/4 cup of freshly squeezed lemon juice
- 2 tablespoons of minced fresh ginger
- 6 kaffir lime leaves
- Ice cubes
- 6 slices of kaffir lime (for garnish)
Method
Step One
Put the sugar in a medium saucepan and add 1 cup of water. Bring this mixture to a simmer over medium heat, stirring until the sugar dissolves. Remove it from the heat.
Step Two
Stir in the kaffir lime juice, lemon juice, minced ginger and the remaining 5 cups of water. Mix this concoction thoroughly and set it aside to allow all the flavors to blend together and infuse.
Step Three
While the lemonade mixture is infusing, tear the kaffir lime leaves into several pieces each. This will allow them to release their aromatic oils more easily.
Step Four
Add the torn kaffir lime leaves to the lemonade mixture. Let the mixture stand for about 1 hour to further infuse the flavors.
Step Five
Pour the lemonade mixture through a fine sieve into a large pitcher or jug, removing and discarding the ginger pieces and lime leaves.
Step Six
Chill the lemonade in the refrigerator for at least an hour before serving, or until it is sufficiently cold for your taste.
